Never say NO to dessert on a loved one's birthday.


Today is no exception... it's my husband's birthday.  Here's his favorite.

Pecan Pie - serves 8
(This has been kicking around in my recipe book for so long, I have no idea where it came from!)
4 eggs
1 cup dark brown sugar
3/4 cup light corn syrup
1/2 tsp salt
1/4 cup melted butter
1 tsp vanilla
2 cups chopped pecans, toasted
9" unbaked pie crust
1/3 cup shelled pecan halves

1. Line pie plate with pastry pie crust while oven is preheating to 400.
2. Beat eggs. Add sugar, syrup, salt butter and vanilla.
3. Sprinkle pecans onto the pie crust.  Pour egg mix over pecans.  Arrange pecan halves around edge next to crust.
4. Set pie on middle rack (I also place it on a cookie sheet to catch any spill over) in oven.  Bake 10 minutes.  Reduce heat to 325.  Bake 25-30 minutes.
5. Let cool.  (Sing!)  Enjoy.
