Happy Thanksgiving!


Nutmeg, cinnamon, clove are some of the tastes of autumn pies and harvest meals. Thanksgiving is the time to share a meal, do something for someone less fortunate, and pause to reflect.


Sweet Potato Casserole with Apples and Marshmallos
A New England Table Cookbook - serves 8

3 pounds sweet potatoes,peeled and cut into 1/3" thick rounds
1/2 cup chopped pecans
1/2 cup raisins
1/2 cup brown sugar
3/4 t cinnamon
4 medium apples, peeled and cut into 1/3" slices
5 T butter - melted
3/4 cup minature marshmallows

1- Preheat oven to 400. Butter baking dish. Toss together potatoes, pecans, raisins, sugar and cinnamon in a large bowl. Place half the apples in the pan. Arrange half the sweet potato mixture on top and drizzle with 1/2 melted butter. Repeat layering. Drizzle with remaining butter. Cover with foil.

2. Bake casserole, covered about 1 3/4 hours.

3. Preheat broiler. Sprinkle marshmallows over casserole and broil until slightly browned. About a minute.

A bowl full of spice color!
