Friends - New and Old


It is officially fall now. School has begun and I'm finding time to reconnect with friends... taking walks, sharing recipies and watching the leaves change color. Perhaps I'm collecting memories to store away like a squirrel gathering nuts before the snow starts to fall. Here is a recipe a new friend shared with me this weekend; it's a delicious way to eat leafy greens.

Kale Pie
Susan's recipie - enough to share with friends new and old

Kale - stems removed, leaves chopped
3 hard boiled eggs, sliced
Chopped onion
Salt & Pepper

Saute onion until soft, add kale, saute until soft. Add salt and pepper.
Let cool and then stir in eggs.

Combine: 1 1/4c flour, 1t baking powder, 1/2t salt, 1c sour cream, 3 eggs, 3T mayo. Put half of this mix on the bottom of a well oiled 10" pie plate. Add filling. Put remainder of dough mix on top and smooth to cover filling.

Bake at 375 for 45 minutes.

Making a set of mugs to sip coffee from while sharing a lovely treat with a friend just seems right.....
