Blueberry Muffins
Joy of Cooking (copyright 2006)
Says it makes 12, but my batch made 18.
Combine:
2 eggs
1 cup milk
2/3 cup sugar
1/3 cup vegetable oil
1 t vanilla
Add:
2 cups flour
1 T baking powder
1/2 t salt
Fold in:
1 10oz package of frozen blueberries
After dividing the batter evenly into greased muffin tins,
sprinkle tops with a mix of cinnamon and sugar. Bake at 400 for at least 20 minutes. Cool on wire rack.
