...and the groundhog saw his shadow
In our house, we call left-over suppers "must-go" meals. The roasted potatoes from Sunday's dinner and the "at the end of their time" scallions added to thawed frozen shrimp and seasonings made for a fantastic must-go on Monday. Here's a great one dish meal to warm you up in winter.
Shrimp with scallions and crispy potatoes - serves 4
Martha Stewart Food Magazine
2T & 1t olive oil
2 baking potatoes, cut into 1/2" cubes
2 scallions, sliced and separated white and green
1 lb peeled and deveined shrimp, thawed
2 t curry powder
coarse salt & ground pepper
1. Cook potatoes in 2T oil 12-14 minutes. Add white parts of scallions, cooking 1 minute more. Transfer to a plate.
2. Add 1t oil, shrimp, curry and cook 2-3 minutes. Return potatoes & scallions. Toss. Season with salt and pepper. Serve with green scallion sprinkled on top.
Containers for salt and pepper on the stove make for easy access while cooking.
