Easy dinner when the gangs all out for a weeknight soccer game. This makes a delicious lunch too!
Pasta Salad - 4-6 servings
Joy of Cooking-2006
1. While still warm, combine 8 oz of any short pasta (penne, farafelle or wagon wheels) with 3T olive oil, 3T white wine vinegar, salt and pepper.
2. Let cool to room temperature.
3. Stir in 24 grape tomatoes (halved), 1/2 cup sliced red onion, 12 black olives (pitted and sliced), 1T capers, 1/4 cup sliced basil and 1t finely grated lemon zest.
4. Adjust the seasonings. Serve at room temperature.
