Pumpkin Season

The only thing better than teatime in the afternoon is the company you share it with.

"As with any tea bread, this one improves with age". (~just like friendship~)

Pumpkin Tea Bread - makes 1 loaf
A New England Table: Mystic Seaport Cookbook

3 cups sugar
1 cup vegetable oil
3 eggs
2 cups pumpkin
3 cups flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cloves
1 tsp cinnamon
1 tsp nutmeg

1. Preheat oven to 350.
2. Blend sugar and oil, add eggs and pumpkin. Mix well.
3. Stir in remaining ingredients and pour into a greased bundt pan or tube cake pan.
4. Bake 1 hour and 15 minutes. Cool bread in pan. This bread freezes well.

While sharing a slice of pumpkin bread with a friend recently, I enjoyed the chocolate chips she added to her recipe.
