Food & Pottery in Pennsylvania Dutch Country


The Pennsylvania Dutch Amish folk lead a simple life that includes cooking with farm fresh ingredients (my favorite!). I recently had the good fortune to visit this wonderful place. Here is a recipe in honor of the one eaten at an Amish bakery in Bird-in-Hand, PA.

Apple Brown Betty - serves 6
Martha Stewart's Fresh Flavor Fast

4-5 slices white sandwich bread, torn into large pieces
1/2 stick butter, melted
6 gala apples, peeled, cored, and cut into 1/2 inch slices
2T fresh lemon juice
1/3 cup brown sugar
1/2t cinnamon
1/4t nutmeg
vanilla ice cream (Ben and Jerry's Fair Trade Vanilla)

1. Food process bread, toast in a 375 oven 8-10 minutes. Cool. Mix with melted butter.
2. Toss apples with lemon juice, sugar, cinnamon, nutmeg and 1/2 bread crumb mixture. Bake at 375 in a 2 quart shallow dish, sprinkled with remaining crumbs, covered with foil.
3. After 40 minutes, remove foil and cook 10-15 more minutes. Cool. Serve with vanilla ice cream.
